Preparation Steps
Preheat your oven to 425°F (220°C).
In a large bowl, toss the diced potatoes with vegetable oil and salt.
Spread the potatoes onto a baking sheet and bake for 25 minutes, or until golden brown.
Remove the potatoes from the oven and sprinkle with cheddar cheese.
In a small bowl, mix the sour cream with taco seasoning.
Serve the potatoes hot, topped with the seasoned sour cream.
Notes
For extra flavor, add chopped green onions or jalapeños on top before serving.
