  • 2 cups Russet Potatoes peeled and diced
  • 1 tablespoon Vegetable Oil
  • 1 teaspoon Salt
  • 1 cup Cheddar Cheese shredded
  • 0.5 cup Sour Cream
  • 1 tablespoon Taco Seasoning

Preparation Steps

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the diced potatoes with vegetable oil and salt.
  • Spread the potatoes onto a baking sheet and bake for 25 minutes, or until golden brown.
  • Remove the potatoes from the oven and sprinkle with cheddar cheese.
  • In a small bowl, mix the sour cream with taco seasoning.
  • Serve the potatoes hot, topped with the seasoned sour cream.

Notes

For extra flavor, add chopped green onions or jalapeños on top before serving.
