Preparation Steps
In a large skillet or Dutch oven, heat the vegetable oil over medium heat.
Add the chopped onion, green bell pepper, and celery. Cook until softened, about 5-7 minutes.
Add the minced garlic and cook for another minute until fragrant.
Stir in the Cajun seasoning, cayenne pepper (if using), black pepper, and salt.
Pour in the chicken broth and bring to a simmer.
Add the cooked white rice to the skillet and stir to combine with the vegetable and seasoning mixture.
Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice has absorbed most of the liquid and is tender. Stir occasionally.
Fluff the rice with a fork before serving.
