  • 0.5 cup unsalted butter melted
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon cornstarch
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 0.25 cup candy-coated rainbow chocolate chips

Preparation Steps

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  • Add the egg and vanilla extract, whisking until fully combined.
  • Stir in the flour, cocoa powder, cornstarch, baking soda, and salt until a soft dough forms.
  • Scoop the dough into 12 equal-sized balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10 to 12 minutes, until the edges are set but the centers are still soft. Let cool completely on the baking sheet.
  • To make the ganache, heat the heavy cream in a microwave-safe bowl until simmering, then pour over the chocolate chips. Let sit for 2 minutes, then whisk until smooth.
  • Spoon the chocolate ganache over each cooled cookie and immediately top with candy-coated rainbow chocolate chips. Allow the ganache to set before serving.

Store cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
