cottage cheese alfredo

Creamy and delicious alfredo sauce made with cottage cheese for a protein-packed and lighter option.

  • 1 pound Pasta
  • 1 cup Cottage Cheese Low-fat
  • 0.5 cup Parmesan Cheese Grated
  • 0.25 cup Milk
  • 2 cloves Garlic Minced
  • 2 tablespoons Olive Oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  • While pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  • In a blender or food processor, combine cottage cheese, Parmesan cheese, milk, salt, and pepper. Blend until smooth and creamy.
  • Pour the cottage cheese mixture into the skillet with the garlic. Cook over low heat, stirring constantly, until heated through.
  • Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add a little of the reserved pasta water until desired consistency is reached.
  • Serve immediately. Garnish with extra Parmesan cheese and fresh parsley, if desired.

Notes

This recipe can be easily customized. Add vegetables like broccoli or spinach for extra nutrients. For a spicier sauce, add a pinch of red pepper flakes.
