Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
While pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
In a blender or food processor, combine cottage cheese, Parmesan cheese, milk, salt, and pepper. Blend until smooth and creamy.
Pour the cottage cheese mixture into the skillet with the garlic. Cook over low heat, stirring constantly, until heated through.
Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add a little of the reserved pasta water until desired consistency is reached.
Serve immediately. Garnish with extra Parmesan cheese and fresh parsley, if desired.
Notes
This recipe can be easily customized. Add vegetables like broccoli or spinach for extra nutrients. For a spicier sauce, add a pinch of red pepper flakes.
