  • 4 oz Cream cheese, softened
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 1.5 cup Mashed ripe bananas About 3 medium

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a medium bowl, whisk together flour, baking soda, and salt.
  • In a large bowl, cream together butter, sugar, and cream cheese until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the mashed bananas.
  • Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, add 0.5 cup of chopped walnuts or pecans to the batter.
