  • In a large mixing bowl, beat together the cream cheese and eggs until smooth.
  • Add sugar and vanilla extract and continue to mix until well combined.
  • Heat a non-stick skillet over medium heat and pour 1/4 cup of batter onto the skillet.
  • Cook for 2-3 minutes or until bubbles appear, then flip and cook for another 2 minutes.
