Creamy Bacon Mac and Cheese

This ultra creamy bacon mac and cheese recipe is quick and easy to make on the stovetop and is great as a side dish or a comforting main dish.

  • 1 lb elbow macaroni
  • 6 slices bacon cut into 1 inch strips
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3 cups milk
  • 1 cup heavy cream
  • 2 cups cheddar cheese shredded
  • 2 cups gruyere cheese shredded
  • 1 cup Parmesan cheese shredded
  • 4 ounces cream cheese
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • 0.5 teaspoon pepper

Preparation Steps

  • Begin by cooking your pasta in boiling water according to the package instructions. Then drain and set aside.
  • While the pasta water is coming to a boil, cut your bacon into 1 inch strips. Cook in a skillet over medium heat for around 7-8 minutes until crispy.
  • To make the cheese sauce, start by making a roux. Melt your butter over medium heat then whisk in the flour.
  • Whisk in the milk and cream and continue whisking for around a minute to ensure there are no lumps.
  • Add the shredded cheeses in 1 to 2 cup batches and stir until melted.
  • Stir in the cooked pasta and bacon then serve.

Notes

For best results, grate your own cheese rather than using pre-shredded bagged cheese.
