Cook spaghetti according to package directions. Drain and set aside.
While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
Add chopped onion to the same skillet and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
Pour in heavy cream and chicken broth. Stir in Italian seasoning, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.
Stir in grated Parmesan cheese until melted and the sauce is smooth.
Return the cooked chicken to the skillet. Add the cooked spaghetti to the skillet and toss to coat everything in the creamy sauce.
Serve immediately, garnished with fresh parsley if desired.
