Creamy Chicken Soup

A comforting and creamy chicken soup, perfect for a chilly day.

  • 1 lb Boneless, skinless chicken breasts Cut into 1-inch pieces
  • 1 cup Diced carrots
  • 1 cup Diced celery
  • 1 medium Yellow onion Diced
  • 4 cups Chicken broth Low sodium
  • 1 cup Heavy cream
  • 2 tbsp All-purpose flour
  • 2 tbsp Butter Unsalted
  • 1 tsp Dried thyme
  • 1 tsp Salt To taste
  • 0.5 tsp Black pepper To taste

Preparation Steps

  • Melt butter in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5 minutes.
  • Stir in flour and cook for 1 minute. Gradually whisk in chicken broth until smooth.
  • Add chicken, thyme, salt, and pepper. Bring to a simmer and cook until chicken is cooked through, about 15 minutes.
  • Stir in heavy cream and heat through. Do not boil.
  • Serve hot and enjoy!

Notes

For a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and add to the soup during the last 5 minutes of cooking.
