Instructions
Preparation Steps
Melt butter in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5 minutes.
Stir in flour and cook for 1 minute. Gradually whisk in chicken broth until smooth.
Add chicken, thyme, salt, and pepper. Bring to a simmer and cook until chicken is cooked through, about 15 minutes.
Stir in heavy cream and heat through. Do not boil.
Serve hot and enjoy!
Notes
For a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and add to the soup during the last 5 minutes of cooking.
