Creamy Spinach Mushroom Gnocchi

  • 1 pound gnocchi store-bought or homemade
  • 2 tablespoons olive oil
  • 1 cup cremini mushrooms sliced
  • 3 cups spinach fresh
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add mushrooms and cook until they start to brown.
  • Add spinach to the skillet and cook until wilted.
  • Pour in the heavy cream and stir in garlic powder, salt, and black pepper. Let simmer for a few minutes until the sauce thickens slightly.
  • Add the cooked gnocchi to the skillet and toss to coat with the creamy sauce. Serve hot.

Notes

For a variation, try adding grated Parmesan cheese to the sauce.
