Cut the chicken breasts into 1-inch cubes.
In a medium mixing bowl, combine the melted butter, olive oil, paprika, garlic powder, dried oregano, salt, and pepper. Whisk until well combined.
Preheat the air fryer to 400°F for 5 minutes.
Add the chicken pieces to the bowl with the butter mixture and toss gently until all pieces are evenly coated.
Pour the Panko breadcrumbs into a large zip-top bag. Add the coated chicken pieces, seal the bag, and shake well to coat the chicken completely in the breadcrumbs.
Place the chicken nuggets in the air fryer basket in a single layer, ensuring they do not touch. Cook in batches if necessary.
Air fry at 400°F for 5 minutes. Flip the nuggets over and cook for an additional 4-5 minutes, or until golden brown, crispy, and cooked through (internal temperature of 165°F).
