Preparation Steps

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  • In a separate bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, leaving some space between each cookie.
