Preheat oven to 350°F (175°C).
In a medium saucepan, whisk together milk, sugar, and cornstarch.
Cook over medium heat, stirring constantly, until the mixture thickens.
In a separate bowl, whisk the eggs.
Temper the eggs by slowly whisking in a small amount of the hot milk mixture.
Pour the egg mixture into the saucepan and cook for 1-2 minutes, stirring constantly.
Remove from heat and stir in vanilla extract.
Pour the custard into the pie crust.
Bake for 50 minutes, or until the custard is set.
Let cool completely before serving.
Notes
For a richer custard, use heavy cream instead of some of the milk. You can also add a pinch of salt to enhance the flavor.
