  • Preheat oven to 350°F (175°C).
  • In a medium saucepan, whisk together milk, sugar, and cornstarch.
  • Cook over medium heat, stirring constantly, until the mixture thickens.
  • In a separate bowl, whisk the eggs.
  • Temper the eggs by slowly whisking in a small amount of the hot milk mixture.
  • Pour the egg mixture into the saucepan and cook for 1-2 minutes, stirring constantly.
  • Remove from heat and stir in vanilla extract.
  • Pour the custard into the pie crust.
  • Bake for 50 minutes, or until the custard is set.
  • Let cool completely before serving.

Notes

For a richer custard, use heavy cream instead of some of the milk. You can also add a pinch of salt to enhance the flavor.
