  • 0.75 cups sweetened shredded coconut plus extra for topping

  • 2 teaspoons vanilla extract
  • 2 eggs large

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a medium bowl, whisk together the flour and baking powder.
  • In a separate large bowl, mix the melted butter and brown sugar until well combined.
  • Add the eggs and vanilla extract to the butter mixture, mixing until smooth.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently.
  • Fold in the dark chocolate chips and shredded coconut.
  • Spread the batter evenly in the prepared baking dish and sprinkle extra coconut on top.
  • Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
