In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated apple.
Heat a lightly oiled griddle or frying pan over medium heat.
Pour or scoop the batter onto the griddle, using approximately 0.25 cup for each pancake. Cook until bubbles form on the surface, then flip and brown on the other side. Serve hot.
