In a medium bowl, whisk together the heavy cream, whole milk, sugar, cinnamon, vanilla extract, and salt until the sugar is mostly dissolved.
Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions. This usually takes about 20-25 minutes.
Once the ice cream is churned, transfer it to an airtight container and freeze for at least 2 hours to allow it to firm up. If you want to eat it later it can be freezed up to 2 weeks.

Notes
For a stronger cinnamon flavor, you can add an extra 1/2 teaspoon of ground cinnamon. You can also add a splash of bourbon or rum for an extra kick.
