Ingredients
- 1/3 cup unsalted butter softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup whole milk
- 12 ounces fresh or frozen cranberries
Instructions
Heat the oven to 350°F. Butter and flour an 8×4-inch loaf pan.
Cream the butter and sugar until light and fluffy, about 2–3 minutes. Mix in the vanilla and eggs.
Sift the flour, baking powder, and salt. Add the dry mixture on low speed, alternating with the milk, and stop as soon as the batter is combined.
Fold in the cranberries, spread the batter in the pan, and bake for about 60 minutes. A toothpick should come out clean or with a few moist crumbs.
