A crisp, refreshing, and easy cucumber salad made with sliced cucumbers, red onion, fresh dill, and a light vinaigrette. The perfect healthy summer side dish.

  • 2 long English cucumbers thinly sliced
  • 1 medium red onion thinly sliced
  • 0.25 cup white wine vinegar
  • 1 tablespoon sugar
  • 0.33 cup fresh dill chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Preparation Steps

  • Place the sliced cucumbers in a colander, sprinkle lightly with salt, and let them drain for 15 minutes to remove excess moisture. Discard any liquid.
  • In a large bowl, combine the drained cucumbers and sliced red onion.
  • In a small bowl or jar, whisk together the white wine vinegar, sugar, salt, and black pepper until the sugar is fully dissolved.
  • Pour the vinegar dressing over the cucumbers and onions, tossing gently to coat.
  • Sprinkle the fresh chopped dill over the salad, toss once more, and serve immediately or chill in the refrigerator.

Notes

For best results, let the salad chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
