Easy Pumpkin Truffles with White Chocolate
These easy pumpkin truffles combine cream cheese, pumpkin, warm spices, and graham cracker crumbs under a crisp white chocolate shell.

Ingredients
- 8 oz cream cheese softened
- 1/2 cup pumpkin puree plain puree
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground nutmeg
- 2 cups graham cracker crumbs plus extra for rolling
- 12 oz white chocolate melting wafers
- 1 tbsp coconut oil optional for thinning chocolate
Instructions
Beat the cream cheese, pumpkin puree, vanilla, cinnamon, ginger, and nutmeg until smooth.
Mix in the graham cracker crumbs until a soft, scoopable mixture forms. Chill for 30 minutes.
Scoop and roll the mixture into 18 balls. Chill the balls for at least 60 minutes.
Melt the white chocolate wafers gently, stirring until smooth. Stir in coconut oil only if needed.
Dip each chilled truffle in the melted chocolate, let excess drip away, and set on parchment. Chill until firm.
