  • 2 tablespoons Olive oil
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 can Diced tomatoes (14.5 oz)
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cumin
  • 0.25 teaspoon Cayenne pepper (optional)
  • 4 large Eggs
  • 2 tablespoons Fresh parsley chopped, for garnish

Instructions
 

Preparation Steps

  • Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  • Stir in diced tomatoes, paprika, cumin, and cayenne pepper (if using). Bring to a simmer and cook for 10 minutes, stirring occasionally.
  • Make 4 wells in the tomato mixture. Crack an egg into each well.
  • Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes for runny yolks.
  • Garnish with fresh parsley and serve immediately.

Notes

Serve with crusty bread for dipping into the flavorful sauce.
