Instructions
Preparation Steps
Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in diced tomatoes, paprika, cumin, and cayenne pepper (if using). Bring to a simmer and cook for 10 minutes, stirring occasionally.
Make 4 wells in the tomato mixture. Crack an egg into each well.
Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes for runny yolks.
Garnish with fresh parsley and serve immediately.
Notes
Serve with crusty bread for dipping into the flavorful sauce.
