  • 1.5 lb Boneless, skinless chicken breasts
  • 1 packet Taco seasoning Low sodium
  • 1 can Black beans rinsed and drained
  • 1 can Corn drained
  • 1 can Diced tomatoes undrained
  • 1 can Rotel diced tomatoes and green chilies undrained
  • 4 cups Chicken broth

Instructions
 

Preparation Steps

  • Place chicken breasts in a slow cooker.
  • Sprinkle taco seasoning over the chicken.
  • Add black beans, corn, diced tomatoes, Rotel, and chicken broth.
  • Cook on low for 6-8 hours or high for 3-4 hours.
  • Shred chicken with two forks and stir back into the soup.
  • Serve with your favorite toppings such as shredded cheese, sour cream, or avocado.

Notes

Optional: Add a can of green chiles for extra spice.
