Preparation Steps
Melt butter in a large pot over medium heat. Add onions and cook, stirring occasionally, until caramelized, about 30-40 minutes.
Add beef broth, thyme, sugar, salt, and pepper to the pot. Bring to a simmer and cook for 15 minutes.
Preheat broiler. Place toasted baguette slices on a baking sheet and top with Gruyere cheese.
Broil until cheese is melted and bubbly, about 2-3 minutes.
Ladle soup into bowls and top with cheesy croutons. Serve immediately.
