This French Onion Soup Rice is a comforting and flavorful dish, perfect for a chilly evening. It combines the classic flavors of French onion soup with the convenience of a one-pot rice recipe.
Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized, about 20-25 minutes.
Stir in beef broth, rice, thyme, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is cooked and liquid is absorbed.
Preheat oven broiler. Place French bread slices on a baking sheet and toast lightly under the broiler.
