  • 3 cups Sliced Onions
  • 4 cups Beef Broth
  • 1 cup Long-Grain Rice
  • 0.5 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 4 slices French Bread
  • 1 cup Grated Gruyere Cheese

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized, about 20-25 minutes.
  • Stir in beef broth, rice, thyme, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is cooked and liquid is absorbed.
  • Preheat oven broiler. Place French bread slices on a baking sheet and toast lightly under the broiler.
  • Spoon rice mixture into oven-safe bowls. Top each bowl with a toasted bread slice and sprinkle with Gruyere cheese. Broil until cheese is melted and bubbly, about 2-3 minutes. Watch carefully to avoid burning.
  • Serve immediately and enjoy!

Notes

For a vegetarian option, substitute vegetable broth for beef broth. You can also add a splash of dry sherry to the soup while it's simmering for added flavor.
