  • 1 large egg
  • 2.5 cups all-purpose flour

  • 8 ounces cream cheese softened
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups assorted fresh fruit such as strawberries, blueberries, kiwi

Preparation Steps

  • Preheat oven to 350°F (175°C). Cream together butter and sugar until light and fluffy. Beat in egg.
  • In a separate bowl, whisk together flour and baking powder. Gradually add to the wet ingredients, mixing until just combined.
  • Roll out dough on a lightly floured surface and place it in a 9-inch pizza pan.
  • Bake for 12-15 minutes, or until lightly golden.
  • Let cool completely. Meanwhile, beat together cream cheese, powdered sugar, and vanilla extract until smooth.
  • Spread cream cheese frosting over the cooled cookie crust. Arrange fruit on top.
