Ingredients
  

  • 4 bone-in skin-on chicken breasts
  • 1 tablespoon Galena Street Chicken and Rib Rub or your preferred spice rub
  • Olive oil optional

Preparation:

  • Preheat your oven to 375°F (190°C).
  • Rinse the chicken breasts under cold water and pat them dry with paper towels.

Seasoning:

  • If desired, lightly coat the chicken breasts with olive oil to help the seasoning adhere and to promote crispiness.
  • Generously sprinkle the Galena Street Chicken and Rib Rub over the chicken breasts, ensuring an even coating on all sides.

Cooking:

  • Baking: Place the seasoned chicken breasts on a baking sheet lined with parchment paper or lightly greased. Bake in the preheated oven for about 45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
  • Grilling: Preheat your grill to medium-high heat. Grill the chicken breasts for approximately 6-7 minutes per side, or until fully cooked and nicely charred.
  • Pan-Searing: Heat a skillet over medium heat with a bit of oil. Sear the chicken breasts skin-side down for 5-6 minutes until crispy, then flip and cook for an additional 5-6 minutes, or until cooked through.

Serving:

  • Once cooked, remove the chicken from the heat source and let it rest for a few minutes to retain its juices.
  • Serve the Galena Street Chicken alongside your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.

  • Marinating Option: For enhanced flavor, marinate the chicken with the rub and a bit of olive oil for 1-2 hours before cooking.
