  • 1 teaspoon Garlic Minced
  • 0.5 teaspoon Ginger Grated
  • 0.25 teaspoon Red pepper flakes Optional, for heat

Preparation Steps

  • In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, and red pepper flakes (if using).
  • Add the chicken pieces to the sauce and toss to coat well. Marinate for at least 15 minutes, or up to 1 hour in the refrigerator.
  • Heat a large skillet or wok over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until the chicken is cooked through and the sauce has thickened, about 8-10 minutes.
  • Serve the Galena Chicken over rice or noodles. Garnish with sesame seeds and chopped green onions, if desired.

Notes

For a creamier sauce, add a splash of coconut milk at the end of cooking. Adjust the amount of red pepper flakes to your spice preference.
