  • 1.5 pounds small Yukon Gold potatoes cut into 1-inch cubes
  • 0.25 cup unsalted butter
  • 4 cloves garlic minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped, for garnish

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the cubed potatoes with melted butter, minced garlic, salt, and pepper until evenly coated.
  • Spread the potatoes in a single layer on a baking sheet.
  • Roast for 30-40 minutes, or until the potatoes are tender and golden brown, flipping them halfway through.
  • Garnish with fresh chopped parsley before serving.

These potatoes are best served immediately, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
