Preparation Steps
Preheat your oven to 400°F (200°C).
In a large bowl, toss the cubed potatoes with melted butter, minced garlic, salt, and pepper until evenly coated.
Spread the potatoes in a single layer on a baking sheet.
Roast for 30-40 minutes, or until the potatoes are tender and golden brown, flipping them halfway through.
Garnish with fresh chopped parsley before serving.

These potatoes are best served immediately, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
