Garlic Parmesan Focaccia Bread with Rosemary

  • 1 1/2 cups warm water
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon granulated sugar
  • 4 cups bread flour
  • 2 teaspoons fine salt
  • 1/3 cup olive oil divided
  • 4 cloves garlic thinly sliced
  • 2 tablespoons fresh rosemary chopped
  • 1/2 cup finely grated Parmesan cheese

  • Stir the warm water, yeast, and sugar together and let stand for 5 minutes until lightly foamy.
  • Mix in the bread flour, fine salt, and 2 tablespoons of olive oil until a shaggy dough forms.
  • Knead for 8 minutes until smooth, cover, and let rise for 75 minutes until doubled.
  • Coat a 9-by-13-inch pan with 2 tablespoons olive oil, stretch the dough into the pan, cover, and rise for 30 minutes.
  • Heat the oven to 425°F, press deep dimples across the dough, and drizzle with the remaining olive oil.
  • Top with garlic, rosemary, and Parmesan, then bake for 22 to 25 minutes until deeply golden.
  • Cool for 10 minutes before cutting into 12 pieces.
