These Garlic Parmesan Mashed Potato Cups are a delicious and easy appetizer or side dish! Creamy mashed potatoes are mixed with garlic and parmesan cheese, then baked in muffin cups until golden brown and crispy.

  • 3 pounds Russet Potatoes
  • 0.5 cup Butter unsalted
  • 0.75 cup Milk
  • 1 cup Grated Parmesan Cheese
  • 2 cloves Garlic minced
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black Pepper

Preparation Steps

  • Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
  • Peel and chop potatoes into 1-inch chunks. Boil in salted water until tender, about 15-20 minutes.
  • Drain potatoes and return to the pot. Add butter, milk, Parmesan cheese, minced garlic, salt, and pepper.
  • Mash with a potato masher or use an electric mixer until smooth and creamy.
  • Spoon mashed potatoes into the prepared muffin cups, filling each about 3/4 full.
  • Bake for 20-25 minutes, or until golden brown and heated through.
  • Let cool slightly before serving.

Notes

Serve these delicious mashed potato cups warm. You can add a sprinkle of fresh parsley or chives for garnish. For extra flavor, you could add a pinch of paprika.
