These Garlic Parmesan Mashed Potato Cups are a delicious and easy appetizer or side dish! Creamy mashed potatoes are mixed with garlic and parmesan cheese, then baked in muffin cups until golden brown and crispy.
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
Peel and chop potatoes into 1-inch chunks. Boil in salted water until tender, about 15-20 minutes.
Drain potatoes and return to the pot. Add butter, milk, Parmesan cheese, minced garlic, salt, and pepper.
Mash with a potato masher or use an electric mixer until smooth and creamy.
Spoon mashed potatoes into the prepared muffin cups, filling each about 3/4 full.
Bake for 20-25 minutes, or until golden brown and heated through.
Let cool slightly before serving.

Serve these delicious mashed potato cups warm. You can add a sprinkle of fresh parsley or chives for garnish. For extra flavor, you could add a pinch of paprika.
