Instructions
Preparation Steps
Boil potatoes until tender.
Cook bacon until crisp, remove and set aside, reserving bacon grease.
Sauté onion in bacon grease until softened.
Whisk together vinegar, oil, mustard, salt, and pepper.
Combine potatoes, bacon, and onion. Pour dressing over and toss gently.
Serve warm or cold, garnished with parsley.
