German Potato Salad Recipe

A classic German potato salad recipe with a tangy vinaigrette dressing. Perfect for potlucks and barbecues!

  • 2 lbs Yukon Gold Potatoes
  • 1 cup Bacon diced
  • 1 cup Yellow Onion finely chopped
  • 0.5 cup Apple Cider Vinegar
  • 0.25 cup Vegetable Oil
  • 2 tbsp Dijon Mustard
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 0.5 cup Parsley chopped

Preparation Steps

  • Boil potatoes until tender.
  • Cook bacon until crisp, remove and set aside, reserving bacon grease.
  • Sauté onion in bacon grease until softened.
  • Whisk together vinegar, oil, mustard, salt, and pepper.
  • Combine potatoes, bacon, and onion. Pour dressing over and toss gently.
  • Serve warm or cold, garnished with parsley.

This recipe can be easily adapted to your liking. Feel free to add other vegetables or herbs.
