Festive and delicious gingerbread man cookies perfect for the holidays! These cookies are soft, chewy, and spiced with ginger, cinnamon, and cloves. Easy to make and fun to decorate!
In a medium bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt. Set aside.
In a large bowl, cream together butter and brown sugar until light and fluffy. Beat in molasses and egg.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Divide the dough in half, flatten into disks, wrap in plastic wrap, and chill for at least 1 hour.
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
On a lightly floured surface, roll out one disk of dough to about 1/4 inch thickness. Use gingerbread man cookie cutters to cut out shapes.
Place cookies on the prepared baking sheets and bake for 10-12 minutes, or until edges are lightly golden brown. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Decorate with royal icing and sprinkles as desired.
