gluten-free blueberry oat bars

Delicious and easy gluten-free blueberry oat bars, perfect for breakfast or a snack!

  • 1.5 cups gluten-free rolled oats use certified gluten-free
  • 0.75 cup almond flour
  • 0.5 cup brown sugar packed
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup melted coconut oil or butter
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1.5 cups fresh blueberries

Preparation Steps

  • Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • In a large bowl, combine the rolled oats, almond flour, brown sugar, baking soda, and salt.
  • Add the melted coconut oil, maple syrup, and vanilla extract to the dry ingredients and mix until well combined.
  • Gently fold in the blueberries.
  • Press half of the oat mixture into the prepared baking pan. Spread the remaining oat mixture evenly over the top.
  • Bake for 25-30 minutes, or until golden brown.
  • Let cool completely before cutting into bars.

Notes

These bars are best stored in an airtight container at room temperature for up to 3 days.
