Instructions
Preparation Steps
Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
In a large bowl, combine the rolled oats, almond flour, brown sugar, baking soda, and salt.
Add the melted coconut oil, maple syrup, and vanilla extract to the dry ingredients and mix until well combined.
Gently fold in the blueberries.
Press half of the oat mixture into the prepared baking pan. Spread the remaining oat mixture evenly over the top.
Bake for 25-30 minutes, or until golden brown.
Let cool completely before cutting into bars.
Notes
These bars are best stored in an airtight container at room temperature for up to 3 days.
