Preparation Steps
Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
In a large bowl, whisk together gluten-free flour, cocoa powder, baking powder, and salt.
In a separate bowl, combine sugar, oil, eggs, and vanilla extract. Mix well.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Pour batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
Let brownies cool completely in the pan.
Cut brownies into squares. Spread softened ice cream between two brownie squares to create sandwiches.
Wrap each sandwich individually in plastic wrap and freeze for at least 1 hour before serving.
Notes
For best results, use a high-quality gluten-free flour blend. You can also add chocolate chips to the brownie batter for extra chocolate flavor.
