These gluten-free brownie ice cream sandwiches are a delightful treat, combining rich chocolate brownies with creamy vanilla ice cream. Perfect for a summer dessert!

Brownie Ingredients

  • 1 cup Gluten-Free Flour Blend ensure it contains xanthan gum
  • 1 cup Cocoa Powder unsweetened
  • 1 tsp Baking Powder
  • 0.5 tsp Salt
  • 1 cup Sugar
  • 0.5 cup Vegetable Oil
  • 2 Eggs
  • 1 tsp Vanilla Extract

Filling

  • 1.5 qt Vanilla Ice Cream softened

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  • In a large bowl, whisk together gluten-free flour, cocoa powder, baking powder, and salt.
  • In a separate bowl, combine sugar, oil, eggs, and vanilla extract. Mix well.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  • Pour batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  • Let brownies cool completely in the pan.
  • Cut brownies into squares. Spread softened ice cream between two brownie squares to create sandwiches.
  • Wrap each sandwich individually in plastic wrap and freeze for at least 1 hour before serving.

Notes

For best results, use a high-quality gluten-free flour blend. You can also add chocolate chips to the brownie batter for extra chocolate flavor.
