gluten-free calzones

Delicious and easy to make gluten-free calzones, perfect for a quick lunch or dinner!

Ingredients
  

Dough

  • 1.5 cups gluten-free all-purpose flour plus more for dusting
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup warm water
  • 2 tbsp olive oil

Filling

  • 1 cup ricotta cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 0.5 cup cooked Italian sausage crumbled
  • 0.25 cup marinara sauce

Instructions
 

Preparation Steps

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together gluten-free flour, baking powder, and salt. Add warm water and olive oil. Stir until a dough forms.
  • Divide the dough into 4 equal pieces. On a lightly floured surface, roll each piece into a 6-inch circle.
  • In a medium bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, Italian sausage, and marinara sauce.
  • Spoon about 1/4 of the filling onto one half of each dough circle. Fold the other half of the dough over the filling to form a calzone. Pinch the edges to seal.
  • Place the calzones on the prepared baking sheet. Cut a few slits in the top of each calzone to allow steam to escape.
  • Bake for 20-25 minutes, or until golden brown.
  • Let cool slightly before serving.

Notes

Serve with extra marinara sauce for dipping.
