gluten-free coffee cake

This gluten-free coffee cake is moist, delicious, and perfect for breakfast or brunch!

Ingredients
  

Cake

  • 1.5 cups gluten-free all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 0.5 cup vegetable oil
  • 1 cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 cup strong brewed coffee cooled

Streusel Topping

  • 0.5 cup gluten-free all-purpose flour
  • 0.25 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 0.25 cup cold butter cut into small pieces
  • 1 tsp ground cinnamon

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate bowl, combine the granulated sugar, brown sugar, oil, sour cream, eggs, and vanilla extract. Beat until smooth.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the coffee.
  • Pour the batter into the prepared pan.
  • In a small bowl, combine all streusel ingredients until crumbly. Sprinkle evenly over the batter.
  • Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool in the pan before serving.
