This gluten-free peach cobbler is a sweet and easy dessert, perfect for summer. Made with fresh peaches and a buttery gluten-free topping, it's sure to be a crowd-pleaser.

  • 6 cups peeled and sliced peaches fresh or frozen
  • 1 cup gluten-free all-purpose flour Bob's Red Mill 1-to-1 Baking Flour recommended
  • 0.75 cup granulated sugar
  • 0.5 cup butter, melted
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup milk dairy or non-dairy

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine peaches and 1/4 cup sugar.
  • In a separate bowl, whisk together gluten-free flour, remaining sugar, baking powder, and salt.
  • Stir in melted butter and milk until just combined. Do not overmix.
  • Pour the peach mixture into a 9x13 inch baking dish. Drop spoonfuls of the batter over the peaches.
  • Bake for 45 minutes, or until the topping is golden brown and the peaches are bubbly.
  • Let cool slightly before serving.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream for an extra special treat.
