gluten-free peanut butter bread

This recipe creates a delicious and moist gluten-free peanut butter bread, perfect for breakfast or a snack.

  • 1.5 cups gluten-free all-purpose flour blend
  • 0.75 cups granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup vegetable oil
  • 1 cup peanut butter
  • 1 cup milk
  • 1 large egg

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, whisk together the gluten-free flour, sugar, baking soda, and salt.
  • In a separate bowl, combine the oil, peanut butter, milk, and egg. Mix well.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  • Pour batter into the prepared loaf pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Store leftover bread in an airtight container at room temperature for up to 3 days.
