Preparation Steps
In a large bowl, combine flour, salt, sugar, and yeast. Add warm water and oil; mix until a shaggy dough forms.
Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic. Place in a greased bowl, turning once to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
Preheat oven to 400°F (200°C). Bring 8 cups of water to a boil in a large pot. Add baking soda carefully (it will foam up).
Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.
Carefully drop each pretzel into the boiling water for 30 seconds. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.
Sprinkle with coarse salt and bake for 20-25 minutes, or until golden brown.
Let cool slightly before serving.
