gluten-free pretzel rolls

These gluten-free pretzel rolls are soft, chewy, and perfect for sandwiches or snacking. They're easy to make and taste just like the real thing!

  • 1.5 cups Gluten-Free All-Purpose Flour Blend with xanthan gum
  • 1 tsp Salt
  • 1 tsp Sugar
  • 2.25 tsp Active Dry Yeast
  • 1 cup Warm Water (105-115°F)
  • 2 tbsp Vegetable Oil
  • 0.33 cup Baking Soda
  • 8 cups Water
  • 1 Coarse Salt

Preparation Steps

  • In a large bowl, combine flour, salt, sugar, and yeast. Add warm water and oil; mix until a shaggy dough forms.
  • Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic. Place in a greased bowl, turning once to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  • Preheat oven to 400°F (200°C). Bring 8 cups of water to a boil in a large pot. Add baking soda carefully (it will foam up).
  • Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.
  • Carefully drop each pretzel into the boiling water for 30 seconds. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.
  • Sprinkle with coarse salt and bake for 20-25 minutes, or until golden brown.
  • Let cool slightly before serving.

Notes
