Preparation Steps
Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the gluten-free flour, powdered sugar, and salt.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Stir in the vanilla extract. Press the dough together to form a ball.
Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Cut out shapes using cookie cutters.
Place the cookies on the prepared baking sheet and bake for 18-20 minutes, or until lightly golden brown around the edges.
Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
