  • 1.5 cups Gluten-Free All-Purpose Flour Use a blend that contains xanthan gum
  • 0.5 cup Powdered Sugar
  • 0.75 cup Unsalted Butter Cold, cut into cubes
  • 0.25 teaspoon Salt
  • 1 teaspoon Vanilla Extract

Preparation Steps

  • Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the gluten-free flour, powdered sugar, and salt.
  • Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  • Stir in the vanilla extract. Press the dough together to form a ball.
  • Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Cut out shapes using cookie cutters.
  • Place the cookies on the prepared baking sheet and bake for 18-20 minutes, or until lightly golden brown around the edges.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Store in an airtight container at room temperature.
