Preparation Steps
In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
Add the cubed chicken to the bowl and toss to coat evenly in the marinade. Cover and refrigerate for at least 20 minutes.
Thread the marinated chicken pieces onto the soaked wooden skewers.
Preheat a grill or grill pan over medium-high heat.
Grill the chicken skewers for 10 to 15 minutes, turning occasionally, until the chicken is golden brown and cooked through (internal temperature reaches 165°F).
Remove from the grill and let rest for 5 minutes before serving.
Notes
Soaking the wooden skewers in water prevents them from burning on the grill. You can also use metal skewers if preferred.
