Instructions
Preparation Steps
Cook macaroni according to package directions until al dente. Drain and rinse with cold water.
In a large bowl, combine the cooked macaroni, celery, red onion, bell pepper, carrots, and parsley.
In a separate medium bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until smooth.
Pour the dressing over the macaroni mixture and stir gently to combine. Ensure all ingredients are evenly coated.
Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
This macaroni salad is best served chilled. It's a perfect side dish for barbecues and picnics.
