  • 4 whole russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons butter melted

Preparation Steps

  • Preheat the oven to 425°F (220°C).
  • Wash and scrub the potatoes clean. Slice thinly without cutting all the way through, leaving the bottom intact.
  • Brush each potato with olive oil, making sure to get in between the slices. Sprinkle with salt and pepper.
  • Place the potatoes on a baking sheet and bake for 60 minutes until crispy on the outside and tender on the inside.
  • Remove from the oven and brush with melted butter before serving.

Notes

Optional: Add a topping of sour cream and chives for extra flavor.
