Hawaiian Banana Bread

A moist and flavorful banana bread bursting with tropical flavors of pineapple and coconut.

  • 3 ripe bananas bananas
  • 0.5 cup unsalted butter melted
  • 0.75 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup crushed pineapple drained
  • 0.5 cup shredded coconut sweetened

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, mash the ripe bananas with a fork until smooth.

  • Stir in the melted butter, granulated sugar, eggs, and vanilla extract until well combined.

  • In a separate bowl, whisk together the flour, baking soda, and salt.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Gently fold in the crushed pineapple and shredded coconut.

  • Pour the batter into the prepared loaf pan and spread evenly.
  • Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the banana bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

Notes

This Hawaiian banana bread is delicious served plain, or with a light glaze. It's also great toasted with a bit of butter.
