Healthy Banana Bread

  • 3 large ripe bananas
  • 0.5 cup unsweetened applesauce
  • 0.33 cup melted coconut oil
  • 0.5 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1.5 cups whole wheat flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 0.5 cup chopped walnuts or pecans optional

Preparation Steps

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, mash the ripe bananas with a fork until mostly smooth.

  • Stir in the unsweetened applesauce, melted coconut oil, maple syrup, and vanilla extract. Mix well.

  • Whisk in the eggs, one at a time, until fully incorporated.

  • In a separate bowl, whisk together the whole wheat flour, baking soda, salt, and cinnamon.

  • Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  • Fold in the chopped nuts, if using.

  • Pour the batter into the prepared loaf pan and spread evenly.
  • Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

This banana bread is best enjoyed at room temperature or slightly warmed. Store in an airtight container at room temperature for up to 3 days.
