Preparation Steps
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, mash the ripe bananas with a fork until mostly smooth.

Stir in the unsweetened applesauce, melted coconut oil, maple syrup, and vanilla extract. Mix well.

Whisk in the eggs, one at a time, until fully incorporated.

In a separate bowl, whisk together the whole wheat flour, baking soda, salt, and cinnamon.

Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
Fold in the chopped nuts, if using.

Pour the batter into the prepared loaf pan and spread evenly.
Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

This banana bread is best enjoyed at room temperature or slightly warmed. Store in an airtight container at room temperature for up to 3 days.
