In a large pot, combine chicken broth, soy sauce, mirin, ginger, and garlic. Bring to a simmer.
Cook the ramen noodles according to package directions. Drain and set aside.
While the noodles are cooking, pan-fry the pork belly until crispy.
Assemble the ramen bowls: Place noodles in the bowl, pour hot broth over the noodles, top with pork belly, half of a soft-boiled egg, and chopped green onions.

Adjust seasoning to taste. Feel free to add other toppings like seaweed, bamboo shoots, or bean sprouts.
