Homemade Tomato Soup

A rich, creamy, and comforting homemade tomato soup made with crushed tomatoes, fresh basil, garlic, and a touch of cream.

  • 2 tablespoons olive oil
  • 1 large yellow onion chopped
  • 3 cloves garlic minced
  • 1 can crushed tomatoes 28-ounce
  • 2 cups vegetable broth
  • 0.25 cup fresh basil leaves chopped
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup heavy cream

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 5 minutes until soft.
  • Add the minced garlic and cook for 1 minute until fragrant.
  • Stir in the crushed tomatoes, vegetable broth, fresh basil, sugar, salt, and black pepper. Bring to a simmer.
  • Reduce heat to low, cover partially, and simmer for 20 minutes.
  • Use an immersion blender to carefully blend the soup until smooth and creamy.
  • Stir in the heavy cream and simmer for an additional 2 to 3 minutes. Serve warm.

Notes

Serve with a grilled cheese sandwich or crusty bread for the ultimate comfort meal.
