Preparation Steps
Preheat oven to 400°F (200°C).
In a bowl, toss carrots with olive oil, honey, thyme, salt, and pepper.
Spread carrots in a single layer on a baking sheet.
Roast for 20-25 minutes, or until tender and slightly caramelized.
Notes
For extra flavor, add a pinch of red pepper flakes before roasting.
