  • 1 lb Carrots peeled and cut into 1-inch pieces
  • 2 tbsp Olive oil
  • 2 tbsp Honey
  • 1 tbsp Fresh thyme leaves
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • In a bowl, toss carrots with olive oil, honey, thyme, salt, and pepper.
  • Spread carrots in a single layer on a baking sheet.
  • Roast for 20-25 minutes, or until tender and slightly caramelized.

Notes

For extra flavor, add a pinch of red pepper flakes before roasting.
