  • 1 lb Carrots Peeled and chopped
  • 2 tablespoons Olive Oil
  • 2 tablespoons Honey
  • 2 teaspoons Fresh Thyme Chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss the carrots with olive oil, honey, thyme, salt, and pepper.
  • Spread the carrots in a single layer on a baking sheet.
  • Roast for 30 minutes, or until the carrots are tender and slightly caramelized.
  • Serve immediately.

Notes

Garnish with extra thyme sprigs, if desired.
