  • 3.5 cups whole wheat flour freshly milled if possible
  • 1.5 cups warm water not hot, just warm
  • 0.5 cup honey local honey preferred
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon salt
  • 1 packet instant yeast 2 and 1/4 teaspoons

Preparation Steps

  • In a large bowl, mix the warm water and honey until dissolved. Add the yeast and allow it to bloom for about 5 minutes.
  • Add olive oil, salt and 3 cups of whole wheat flour. Stir until a loose batter forms.
  • Gradually add the remaining flour, kneading until a smooth dough forms.
  • Place the dough in a lightly greased bowl, cover, and let rise for 1 hour or until doubled in size.
  • Preheat your oven to 350°F (175°C). Shape the dough into a loaf, place in a greased loaf pan, and allow to rise for another 30 minutes.
  • Bake for 30 minutes or until the bread sounds hollow when tapped.
  • Allow the bread to cool on a wire rack before slicing.

Notes

This bread can be stored at room temperature for up to 3 days, or frozen for up to 3 months.
