  • 0.5 cup Unsweetened Cocoa Powder Dutch-processed is best
  • 0.5 cup Granulated Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 0.5 teaspoon Baking Soda
  • 0.25 teaspoon Salt

Preparation Steps

  • Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together peanut butter, cocoa powder, sugar, eggs, and vanilla extract until smooth.
  • Add baking soda and salt and whisk until just combined.
  • Divide batter evenly among muffin cups, filling each about 3/4 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  • Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
